2nd pass at Twinkies. Pete complained the first batch was too eggy. Also had issue because my pan was for 8 and the recipe made 16. Got another pan in a different brand since the first was no longer available... mistake. The second pan as dreadful and all of the sponge sunk. Since I reduced the recipe by a yolk, I *think* I can do it as 2 yolks, 2 whites and the equivalent of half an egg white.
