The guy is home sick today so I decided to make him bagels this morning. Any excuse to use the MM.:)

I used the new mixer to do a double batch of bagels this morning. Not only did I not worry about setting the mixer on fire with the volume of high gluten flour I used, but I ended up with a puffier bagel with really great chew. They turned out *really* well and I'm loving the Electrolux Magic Mill more every time I use it.

This is my second pass at challah today... first batch used large eggs and turned out to be more white than egg bread. Since a loaf is going to Pete's coworker, I simply had to redo it and these are the result. 5 eggs this time and the braid gets better every time.
