I really hadn't intended to do any baking above the graham crackers today. Then Mal mentioned pumpkin chip cookies. ::shakes a fist in mock anger::

They smell so good. Makes me wish I could eat one. The boys are sure to love them. Since it's not my recipe, I'm not sure I can post it so I asked permission. If she doesn't mind, I'll edit the entry later to add it.

Pumpkin Chocolate Chip Cookies

1 cup packed brown sugar

½ cup white sugar

½ cup shortening

2 eggs

1 ¾ cup canned pumpkin (1 14 oz. can)

1 tsp pure vanilla extract

1 tbsp baking powder

1 tsp cinnamon

½ tsp nutmeg

½ tsp salt

¼ tsp ginger

2 ¾ cups all-purpose flour

1 ½ cups chocolate chips

Directions:

In a large bowl blend sugars. Add shortening and beat to form a “grainy paste.” Scrape sides of bowl, then add eggs, pumpkin, vanilla, and spices. Beat at medium speed until light and fluffy. Add flour and baking powder and mix well. Add chocolate chips.Refrigerate until firm enough to drop by spoon onto ungreased cookie sheet. Bake at 350 degrees for about 14 minutes. Maxes 4-6 dozen.

The smell is driving me crazy.:) I didn't go as far as pulling out a nutmeg nut to grate (my jar stuff is recent) but I did try Penzey new blend of cinnamon for them. Aaron ate one and then while he was putting dishes away, kept eyeing them so I let him have another. He tells me they are really, really good.

I actually did grate a nutmeg nut. Mom doesn't have any ungrated in the house for some reason.

I just ate a big sandwich and those cookies made me forget about it. Ew! My step mom and I generally don't start baking cookies for a few weeks still, but I'll have to show her this and I'm sure we'll make them. They look incredible, and the composition of the picture is wonderful.

I do a lot of baking, but I don't start sweets until summer starts to wind down and it gets cooler. I tend to do a lot of sharing of cookies and such and have a reputation to maintain. ::laughing:: Once Christmas hits, I do waaaaay more than any sane person should, though this year I am going to try to back down from the 700-800 cookies I've been known to do.

Haha! I took a look through your older entries and I can definitely see you're a mad baking woman! I loved the Ghost and Jack-O-Lantern cookies. Hell, I just love Halloween, although Christmas is definitely my favorite. My dad works for Lowe's and every year my step-mom and I bake cookies for his "employees", aka the other people in his department as he is the Manager. I want to say we bake around 5 dozen cookies for each person. I think last year we baked 30 dozen cookies in one night? Crazy, I know. And I don't even have any good cookie recipes.

Hehe. Mad baking woman... I like it.

I've got a knack for knowing a good recipe when I see one, though I lack the creativity on that front to come up with my own. Most of what I do is revised to be non-dairy due to a highly allergic spouse and sometimes I do sugar substitutes (agave or xylitol) because of my own issues with processed sugars. I can only bake so much without giving in to temptation!

30 dozen in one night is definitely quite the feat! When I have large batches, I make my doughs one day and then bake over 2 if it's a lot. One of the best things the spouse ever did was to get me a stand mixer which took 2 days off the Christmas cookie process.:)

Yes! The stand mixer is definitely the way to go. I wish I would have brought mine up from San Diego. I was just recently down there and I thought about it, but maybe neglected to remember about it. Who knows!?

Yes, it'll definitely be interesting this year. I'd be interested in seeing your non-dairy recipes when you post them. I'm always for trying new things, especially for things that are so versatile.
