Cinnamon Scones
Aug. 1st, 2010 05:26 pm For the most part, I'm not a big buyer of boxed mixed. My exception to this is King Arthur scone mix. I ended up with a bag of plain scone mix in order to try my own combinations and today was cinnamon.
Cinnamon Scones
3 cups KA scone mix
1 stick cold butter cut into pieces
1 egg
1/2 milk
Cinnamon chips
Filling:
1/2 tsp vanilla
1/2 stick butter
1/2 cup sugar
Cinnamon to taste (I think I used around 2TB)
Mix filling ingredients. Refrigerate for about an hour.
Preheat oven to 400.
Mix scone mix and butter until powdering. Add egg and milk, mix only until all wet. Add cinnamon chips. Fill wells to scone pan halfway. Spread filling, not quite to edge. Cover with balance of scone mix. Carefully dock scones so that the skewer only pokes to where the filling is. Bake for 16-18 minutes.
Let scones rest in pan for at least 5 minutes before removing.
